One pan meals have become a go-to for me since being a parent, and this recipe is easy, cheap and can feed the whole family. It combines all key food groups, so there is no need to overcomplicate what to serve with this! It's great for snacks, picnics or lunch/evening meals, and can be eaten hot or cold!
Mexican frittata
RECIPE
Makes 6-8 slices

Ingredients:
1 small tin of sweet corn drained
1 red pepper, diced
Half an onion, diced
400g/15oz tin of beans eg black beans, red kidney beans drained and rinsed
300g/ 1 ½ cups new potatoes, sliced
8 eggs
1 tsp smoked or sweet paprika
50g/ ½ cup grated cheese (or dairy free cheese)
4-5 tsp of tomato salsa (optional)
Method
Put your oven on to preheat at 180°C/ Gas mark 4.
Slice your new potatoes and add to a pan of boiling water to cook until they are just going soft (around 8-12 minutes depending on thickness).
Meanwhile to a greased square tin or casserole dish add your sweet corn, pepper, onion and beans.
Once your potatoes are cooked, drain and add to the dish, mixing with the veg and beans until combined.
In a bowl or jug whisk together 8 eggs with smoked paprika, then pour into the tin to just cover the other ingredients.
Sprinkle your cheese and optional salsa on top then put into the oven.
Baked for 25-30 minutes until set, and golden brown on top.

👍 Potatoes often get a bad wrap, but new potatoes or Jersey royal potatoes are actually a great source of Vitamin C. Leaving the skin on will also boost the fibre content of this dish, perfect for that gut bacteria!
